Spam Musubi

There’s nothing quite like coming in from the Waikiki waves and scarfing down a warm Spam Musubi while digging your toes in the sand. That’s a memory that will forever be seared into my memory. And while I can’t just jump on a plane and fly to Hawaii whenever I want, I can make these musubis and be nearly just as happy. 🙂

For this recipe, I highly recommend getting a Musubi Mold – it will make the process much easier and quicker for you. Plus, it’s more fun. 🙂

Ingredients

1 – 12 oz can of SPAM

2 tbsp soy sauce

2 tbsp brown sugar

4 oz pineapple juice

1 pot of cooked sticky rice

1 sheet of nori seaweed

Instructions

Slice spam into 8 equal slices and fry both sides in a non-stick frying pan. Meanwhile, mix soy sauce and brown sugar in a small bowl. When the spam is crisp on each side, pour the soy sauce mixture on top and let it cook down. When the liquid cooks off and it gets a little sticky, pour in the pineapple juice. Continue cooking until the spam has a sticky glaze. Remove from pan and let cool.

Cut your nori sheet into 3” x 8” strips and set aside.

In your musubi mold, spoon in cooked sticky rice until it’s about 3/4 full. Layer one slice of spam on top and press down with the mold top. remove the mold and carefully wrap seaweed around the musubi.
